Buttermilk Biscuits - Print This Recipe

Buttermilk Biscuits

Yield: 40 biscuits

 

3 lb 8 oz/1.59 kg all-purpose flour
4 oz/113 g sugar
3 oz/85 g baking powder
¾ oz/21 g salt
1 lb/454 g butter, cold
8 oz/227 g eggs
24 fl oz/720 mL buttermilk
Egg wash , as needed

  1. Line a sheet pan with parchment paper.
  2. Combine the flour, sugar, baking powder, and salt.
  3. Add the butter and rub together until the mixture has the appearance of a coarse meal.
  4. Combine the eggs and buttermilk. Add to the flour mixture, tossing to combine.
  5. Roll out the dough on a lightly floured work surface to a thickness of 1 in/3 cm and, using a 2-in/5-cm cutter, cut out the biscuits.
  6. Place the biscuits on the prepared pans and lightly brush them with egg wash.
  7. Bake at 425°F/218°C until golden brown, about 15 minutes.
  8. Transfer the biscuits to racks and allow them to cool completely.
