True to their name, watermelons are 92% water, and are a refreshing ingredient in a variety of beverages. Chef Rebecca Peizer from The Culinary Institute of America shows us how to make Watermelon Agua Fresca. It’s delicious on its own, or as the base for a number of cocktails. Chef Rebecca recommends adding rum or tequila!

Ingredients

  • 8 cups Watermelon, seeded, cut into large chunks, divided

  • 1 cup Water

  • 1/3 cup Sugar

  • ¼ cup Lime juice

  • 4 cups Club soda or seltzer water, chilled

  • to garnish Lime slices

  • to garnish Watermelon, sliced small wedge

Directions

  • Place the watermelon, water, and sugar in a blender, and puree. Pour through a coarse strainer into a large container.
  • Stir in the lime juice, and refrigerate until well chilled, about 4 hours.
  • To serve, stir in the seltzer water and watermelon cubes, and garnish with lime slices and watermelon wedges.
