Fermented beverages and shrubs have become popular because of their refreshing zingy flavor as well as their health benefits. Watch as Chef Rebecca Peizer from The Culinary Institute of America shows us how to make this watermelon shrub with watermelon juice, sugar and vinegar. You can enjoy the brightly flavored shrub simply mixed with sparkling water, in cocktails, salad dressings or as a glaze for meats.

Ingredients

  • 2 cups Sugar

  • 2 cups Apple cider vinegar

  • 1 lb Watermelon, cubed

  • as needed Water

Directions

  • Heat sugar and vinegar on the stove, stirring constantly until the sugar is dissolved.
  • Add fruit and simmer to release the juices and flavors into the syrup.
  • Cool the mixture
  • Strain out any solids.
  • Place in glass jar and add water to taste.
  • Allow it to rest in the refrigerator for 4 days, covered.
  • More sugar or vinegar can be added to taste.
